Ground Turkey and Sweet Potato Buddha Bowl

Honestly, I don’t know what took me so long to share this recipe with y’all! Alex and I have been making these bowls for a few months now, and they have quickly become our favorite weekly dinner. These bowls have such a great combination of flavors, are filling, and healthy!

What You’ll Need:

  • 1 lb. ground turkey (93% fat free)
  • One sweet potato
  • Shelled edamame (you can find this at Trader Joe’s!)
  • Two eggs
  • One avocado
  • Cinnamon
  • Paprika
  • Olive oil
  • Salt
  • Pepper
  • Garlic

Directions:

  1. Preheat oven to 400 degrees. Skin and dice sweet potatoes into chunks. Place on a baking sheet. Drizzle with olive oil, then toss with salt, paprika and cinnamon. Bake sweet potatoes for 40 minutes, turning them at 20 minutes.
  2. While the sweet potatoes cook, drizzle some olive oil in a skillet and heat to medium. Add garlic and saute, making sure not to burn it! Then, add the ground turkey. Cover with a lid and allow to cook, about 10 minutes. Season with salt and pepper, let sit over low heat until sweet potatoes are done.
  3. Put about one cup of shelled edamame into a bowl, cover with a paper towel, and microwave for 3 minutes.
  4. When the sweet potatoes are done, you will remove from oven and divide them into the bowls. Then, add the shelled edamame and ground turkey. Slice the avocado and add to the top.
  5. Fry two eggs over the stove, and add to the very top of your bowl. (Alex likes poached eggs, so he always poaches ours, but the bowl is just as good with fried eggs, cooked to your liking!)
