Hey y’all! I had a request for more recipes, and I honestly have been cooking so much lately, I’d love to share what I’ve been making with you! Usually, Alex is the chef. He loves to cook and has the patience to try new recipes, whereas I wait until the last minute when I am absolutely starving, and end up just throwing something quick in the oven (or microwave, lol!). However, thanks to quarantine, I’ve been spending more time finding recipes to try and spending time making them! Acai bowls are one of my favorite breakfasts, and usually I get one after pilates on Saturday mornings. However, pilates classes are no longer in session for the time being, so I resulted to making my own bowls at home. However, I think I’ve got my recipe down!
What you’ll need:
- Trader Joe’s unsweetened acai packets
- Greek yogurt (I use plain, but also sometimes use blueberry!)
- Coconut oil
- One banana
- Almond milk
- Strawberries
- Granola
- Coconut chips
First, you’ll break the acai packet into chunks and place it in the blender. Then, you’ll add 1/2 cup of yogurt, 1/4 cup of almond milk, and two tablespoons of coconut oil. Blend until smooth!
Pour mixture into a bowl and add sliced banana, strawberries, granola and coconut chips. Ta-da! Easy as pie, that’s all! For a basic acai recipe, this is quick, easy, and delicious! Sometimes when I need an added sweetness, I add honey on top.
The reason why I add coconut oil into the mixture is because, to be honest, my favorite juice shop here in Dallas adds coconut oil into theirs! Ever since I first had it, I have loved the taste of coconut oil in my acai bowls. Not to mention the benefits of coconut oil, like healthy fats, boosts energy levels and is good for your skin! Although I am no doctor or dietician, I’d say those claims are good enough for me! 😉
